THIS, dish, is honestly, one of the most awesome culinary tidbits..A Fritatta is SERIOUSLY, one of the most versatile, healthy, quick, EASY meals to make- with WHATEVER you happen to have πŸ˜‰ Β I used my medium skillet for this one, it was late, we were hungry, I was running out of stuff, BUT we ALWAYS have eggs..ALWAYS have some sort of veggies, and meats ..so ..get busy!!Β Β πŸ˜‰ Β sautee whatever mix of stuff you happen to have..(mind you- NOTHING is “off limits” for this dish..) I usedΒ some grass fed BUTTER to sautee this in..>.. mmmm BUTTER…..( or you may use olive oil if you prefer) Β Be creative πŸ˜‰ get everything nicely sautee’dΒ and soft. On the side, whip some eggs upΒ ( with or without some cream, or broth for posterity) Β pour egg mixture over your sautee mixture, cook until set a bit. If you add cheese, (or not) you may want to brown it a bit, so-Β set under a broiler for a few minutes, and wallah!

This is the best option, because it is a virtual crowd pleaser. You can tame the meatlover, or the vegetarian, the Paleo person, the Keto person, and pretty much just anyone who likes food. It is also great for breakfast, lunch and dinner too πŸ˜‰ also served hot, room temp or cold..;-) win win win win!!Β Β As always , I highly recommend using only the cleanest food available in your area, free range , grass fed, organic.. Makes 3-4 servings

The Suff you need:

  • 1 lb thinly sliced beef
  • 4 minced garlic cloves
  • 2 TBS minced fresh ginger
  • 2 TBS toasted sesame oil
  • 3 sliced green onions
  • 14 oz (400g) coleslaw/asian veggie mix (or shredded white cabbage)
  • 1 teaspoon cider vinegar
  • 2 TBS soy sauce
  • ΒΌ teaspoon stevia
  • 1-2 TBS teaspoon hot sauce (to taste) I used Franks for this one πŸ˜‰
  • Salt and pepper, to taste

What to do with the Stuff:

  • Put beef into a bowl, with fresh chopped ginger, garlic, and sesame oil, mix well- let set for 10 min
  • Brown the beef in a skillet, season with salt and pepper to taste, remove beef, set aside
  • Add additional oil if needed to pan, then add garlic, onions and coleslaw mix until the cabbage is cooked
  • Stir in the hot sauce, soy sauce, sweetener, and vinegar
  • Add the beef to mixture, mix well to combine

Satiating, low carb, amazing snack.. UBER easy, Uber yum!

Everything I use is always fresh, local, Organic, and the cleanest possible food πŸ˜‰

Serves 2

The Stuff You Need:

  • 2 Large Zucchinis sliced lengthwise
  • Extra Virgin Olive Oil to taste
  • 4 oz cream cheese
  • 3/4 cup fresh bacon crumbles
  • 2 TBS chili garlic sauce (to taste)

What to do with the Stuff:

  • Preheat oven to 350
  • Coat each slice of Zucchini with salt pepper and EVOO
  • Roast/Grill Zucchini until soft and workable, set aside
  • Mix cream cheese, chili garlic sauce, and fresh bacon bits togetehr
  • Place 1 tsp cheese mixture on end of zucchini, roll into a pinwheel.
  • Set on baking sheet lined with parchment paper, seam side down
  • Bake at 350 for 10 min until warmed through
  • Can be made ahead and refrigerated.

Shredded Beef Enchiladas

Serves 4-6

The Stuff you Need;

  • 3 pounds beef chuck roast
  • 1/4 cup water
  • 1 1/2 cups beef broth
  • 3 tablespoons red wine vinegar
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 TBS butter1 large onion, chopped
  • 2 (4 ounce) cans chopped green chile peppers
  • 1 large dicedΒ jalapenos (optional- for heat )
  • 1 tablespoon all-purpose flour
  • 2 cups sour cream
  • 3 cupsΒ shredded Monterey Pepper Jack cheese, divided ( unless you want plain Jack-no spicy)
  • Olive oil for corn tortillasΒ OR
  • 1- 2 cans Enchilada sauce ( to moisten instead of oil)
  • 20 (6 inch) corn tortillasWhat to do with the Stuff:You may eliminate stove topΒ meat preparationΒ altogether, and simply use crockpot with all spices on high 4-6 hrs the day before, or while at work.. otherwise, this method works well, as long as you follow instructions

Also: in reference to corn tortillas.. to prepare them for rolling; you may use the oil preparation OR use the your red enchilada sauce ( topping) to moisten. Another option, if you do not want to roll individual enchiladas, or the corn tortillas are breaking, you may layer them as a lasagne type dish- using all ingredients, topping with red enchilada sauce , cheeses, and avocados

  • Place roast in a large saucepan that has a tight-fitting lid
  • Pour in water, cover, and simmer on low for 30 minutes
  • Increase heat to medium/high, and brown the roast on all sides
  • Once the water has boiled away, pour in the beef broth, vinegar, chili powder and cumin
  • Cover tightly and reduce heat to low
  • Simmer for 1 1/2 to 2 hours or until the beef falls apart when you try to pick it up
  • Shred the beef, using 2 forks or your fingers
  • Place shredded beef back into the saucepan with all theΒ juices, and let cool to room temperature
  • In a large skillet, saute the onions in butter until just soft
  • Mix in flour and green chilies
  • Stir to make rouxΒ constantly for 2 minutes to cook the flour taste out
  • Stir in sour cream and 2 cups of Monterey Pepper JackΒ cheese
  • Cook on low for 10 minutes, stirring often, until the cheese is all melted and mixed.
  • Set asideΒ and let cool.
  • Corn tortillas may be warmed in saute pan either with oil, or red enchilada sauce
  • Using tongs dip the tortillas, one at a time, into the oil or sauce forΒ 10Β seconds each side
  • Drain on paper towels, if using olive oil
  • Preheat oven to 375 degrees F (190 degrees C)
  • Spread sour cream mixture down the center of the tortilla
  • Top with about the same amount of beef
  • Roll up and place seam side down in greased baking dish ( 9x 13)
  • Repeat for each tortilla
  • Continue until you are out of the filling
  • Top with 1 can red enchilada sauce
  • Sprinkle with remaining Monterey Jack cheese
  • Top with avocado slices
  • Bake for 30 minutes or until cheese is melted and bubbling

Makes 4 Burritos

  • The Stuff you need:

  • 1 (7 oz can) chipotle chilis in adobo sauce
  • 1/2 cup sour cream
  • 1 (15-ounce) can black beans, rinsed, drained, and divided
  • 1 cup frozen whole-kernel corn, thawed
  • 4 (8-inch) flour tortillas (I use whole grain tortillas)
  • Cooking spray
  • 1 cup salsa
  • 1 cup shredded Monterey pepper jack cheese ( or plain if you don’t prefer spice)
  • Chopped avocados, onions, lettuce, tomatoes, olives, cilantro and jalapeno’s for garnish

What to do with the Stuff:

  • Preheat oven to 350Β°
  • Remove one chile from can
  • Chop chiles & reserve remaining adobo sauce and chiles for another use
  • Combine sour cream and chile in a medium bowl; let stand 10 minutes
  • Place half of beans in a food processor; process until finely chopped
  • Add chopped beans, remaining beans, and corn to sour cream mixture
  • Spoon 1/2 cup bean mixture down the center of each tortilla
  • Roll up tortillas; place, seam side down, in an 9 x 13-inch baking dish coated with cooking spray Spread salsa over tortillas; sprinkle with cheese
  • Cover and bake at 350Β° for 20 minutes or until thoroughly heated
  • Serve with listed garnishes
  • This dish can be made in advance and chilled; just bring it back to room temperature before baking.

Paleo friendly, Gluten Free, Dairy free

The Stuff you need:

  • 3-4 pound roasting chicken

  • 2 medium onions

  • 2 carrots

  • 2 stalks celery

  • potatoes (optional)
  • 1 bulb garlic

  • olive oil

  • salt & pepper, garlic powder to taste
  • 1 lemon. lime or orange, or onion (to stuff inside)

  • 1 small bunch fresh thyme, rosemary, bay or sage, or a mixture of all 3

What to do with the Stuff:

  • Preheat oven to 475Β°F
  • Take your chicken out of the fridge 45-60 min prior to baking
  • Trim off excess fat, and stuff underneath breast skin on either side
  • Liberally salt and pepper the chicken, set aside (you may do this the night before, and leave uncovered in fridge)
  • Chop veggies into nice sized chunks
  • Separate garlic bulb into individual cloves, leave them unpeeled
  • Put all the veggies and garlic into the middle of a large roasting tray, drizzle with olive oil, salt & pepper to taste
  • Drizzle the chicken with olive oil and additional garlic powder, salt and pepper to taste- rubbing it all over the bird
  • Cut lemon or lime or orange or onion in halves or quarters
  • Put the fruit or onion inside the chicken’s cavity, along with the fresh bunch of herbs
  • Place the chicken on top of the vegetables in the roasting tray and put it into the preheated oven
  • Turn the heat down immediately to 400Β°F and cook the chicken for 1 hour and 20 minutes
  • Baste the chicken halfway through cooking
  • If the veggies look dry, add a splash of water to the tray to stop them burning
  • Chicken should be @ 160-165 on an instant read meat thermometer inserted between thigh and breast
  • When cooked, take the tray out of the oven and transfer the chicken to a board to rest for 15 minutes

He is really squared away in the kitchen, and I have always admired his approach to the simplicity of the “basics”

I saw a presentation of this dish prepared on the EXACT DAY that I was planning a meatloaf for dinner πŸ˜‰ I was REALLY psyched to try this, as it seemed like an awesomely HUGE meatball on a plate of spaghetti. It was PERFECT,Β  because this week, I’m on week 2 of myΒ ketogenic diet, and my hubby, NEEDS pasta..lol.. It worked out so well for us.

The meatloaf goes REALLY well with the pasta. Leftovers..ummm.. (if there are any) are delicious reheated, and I am CERTAIN a meatloaf sandwich would be off the chain..;-) Β ENJOYEEE!!

Whenever possible, BUY ORGANIC< and CLEAN FOODS πŸ˜‰

May be made “Dairy free” Β Gluten Free, Grain free.

(OMIT PASTAS AND CHEESES FOR PALEO)

Mixed meatΒ meatloaf withΒ pastaΒ 
(slightly adapted from Β “Jamie Oliver’s” recipe)

The Stuff you need:

  • Meatloaf:
  • 3 carrots
  • extra-virgin olive oil
  • Β½ onion, finely chopped
  • 1/2 lbΒ ground beef
  • 1/2 lb ground italian pork
  • 1/4 cΒ breadcrumbs (optional)
  • 1Β TBS dried oregano -(to taste)
  • 1 TBS choppedΒ basil ( fresh if possible- to taste)
  • 1 TBS chopped parsley ( fresh if possible- to taste)
  • 3/4 cup crumbled feta cheese
  • 1 large egg
  • a few drops of Tabasco ( to taste)
  • salt andΒ black pepper (to taste)Sauce and pasta:
  • 3 red chili’s sliced, lengthwise, seeded
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 tspΒ oreganoΒ ( fresh if possible- to taste)
  • 1 tspΒ basilΒ ( fresh if possible- to taste)
  • 1 tsp parsley( fresh if possible- to taste)
  • 4 cloves of garlic, minced
  • 1 jar of any kind of tomato sauce
  • salt and black pepper( to taste)
  • 1/2 c cheddar/parmesan or whatever kind of cheese you have to sprinkle on top
  • 16 ozΒ dried spaghetti

What to do with the Stuff

  • Preheat the oven to 200Β°C/400Β°F
  • Peel the carrots, quarter lengthways
  • Place in a roasting tray, drizzle with the oil and bake for 10 minutes
  • In aΒ large bowl, add the meats,Β breadcrumbs, Β oregano, basil, parsley, feta, egg, Tabasco, salt and pepper
  • Mix lightly with your hands (don’t overmix or the meatloaf will be tough) mix all, and spice to your taste
  • Shape into a loaf
  • Make a space in the middle of the tray with the carrots- add the meatloaf
  • BakeΒ for a further 30- 35Β minutes, or until the meatloaf is cooked through
  • While the meatloaf is in the oven, make the sauce- in a medium saucepan
  • Heat the olive oil, add the onion and the herbs,Β add the garlic and cook until fragrant.
  • Add the jar ofΒ sauce,Β season to taste with additional herbs, salt and pepper- etc. to your taste
  • SimmerΒ for 15-20 minutesΒ while Meatloaf is baking
  • Have a large saucepan of salted boiling water ready (for the spaghetti)
  • Remove the tray from the oven, pour the sauce around the meatloaf
  • Top the meatloaf with a spoonful of tomato sauce, andΒ grated cheese
  • Lower heat to 350F put meatloaf back into the oven for 15Β minutes, and the sauce is bubbling
  • Meanwhile, cook the spaghetti according to packet instructions, then drain
  • ServeΒ spaghetti topped with slice(s) of meatloaf, topped with sauce, garnish with carrots, and chili’s

The Stuff you need:

  • 4-6, boneless chicken breast halves (may use frozen if you want)
  • 2 tablespoons butter
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 (14 ounce) can low sodium chicken broth
  • 1 onion, finely diced
  • 4 cloves garlic chopped
  • 3 stalks celery chopped
  • salt, pepper, dried parsley, garlic powder, and onion powder to taste
  • 1 bag frozen mixed veggies, (peas carrots corn)- thawed
  • 1Β package refrigerated biscuit dough, torn into pieces
  • Pillsbury’s Grands Homestyle Buttermilk biscuits work really well
What to do with the Stuff
  • Place the chicken, butter, soup,broth, and garlic and onion in a slow cooker
  • Cover, and cook for 6 hours on low
  • Shred chicken breasts, return to cooker
  • About 90 minutes before serving, add Β torn biscuit dough in the slow cooker
  • Make sure you push them down into the liquid mixture a little, so that they get cooked on the tops, too and saturated with the chicken
  • Add mixed veggies
  • Turn cooker onto high for remaining time
  • Cook covered for 90-120 minutes,Β until dough is done

Asparagus and Mozzarella Stuffed Chicken Breasts

Serves 2
The Stuff you need:
  • 2 large skinless, boneless chicken breast halves
  • salt, black pepper,Β garlic powder, onion powder, and lemon pepper to taste
  • 8 asparagus spears, pre steamed trimmed – divided
  • 1/2 cup shredded mozzarella cheese, divided
  • 1 egg beaten
  • 1/2 cup Italian seasoned bread crumbs mixed withΒ panko
What to do with the Stuff:
  • Preheat an oven to 375 degrees F (190 degrees C)
  • Grease baking dish or pan (8×8)
  • Place each chicken breast between two sheets of heavy plastic (ZiplockΒ freezer bags work) on a solid surface
  • Firmly pound the chicken with the smooth side of a meat mallet to an even thickness of about 1/4 inch
  • Sprinkle each side withΒ your chocen spices, coat well, rub in
  • Place 4 spears of asparagus down the center of eachΒ chicken breast
  • Spread about 1/4 cup of mozzarella cheese over the asparagus
  • Repeat with the other chicken breast
  • Roll the chicken around the asparagus and cheese to make a tidy, compact roll
  • Dip in eggwash, then into crumbs fully covering each breast roll
  • Place the rolls seam sides down in the prepared baking dish
  • Bake in the preheated oven until the juices run clear when pricked with a fork, about 30Β minutes
  • An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C)
