THIS, dish, is honestly, one of the most awesome culinary tidbits..A Fritatta is SERIOUSLY, one of the most versatile, healthy, quick, EASY meals to make- with WHATEVER you happen to have πŸ˜‰ Β I used my medium skillet for this one, it was late, we were hungry, I was running out of stuff, BUT we ALWAYS have eggs..ALWAYS have some sort of veggies, and meats ..so ..get busy!!Β Β πŸ˜‰ Β sautee whatever mix of stuff you happen to have..(mind you- NOTHING is “off limits” for this dish..) I usedΒ some grass fed BUTTER to sautee this in..>.. mmmm BUTTER…..( or you may use olive oil if you prefer) Β Be creative πŸ˜‰ get everything nicely sautee’dΒ and soft. On the side, whip some eggs upΒ ( with or without some cream, or broth for posterity) Β pour egg mixture over your sautee mixture, cook until set a bit. If you add cheese, (or not) you may want to brown it a bit, so-Β set under a broiler for a few minutes, and wallah!

This is the best option, because it is a virtual crowd pleaser. You can tame the meatlover, or the vegetarian, the Paleo person, the Keto person, and pretty much just anyone who likes food. It is also great for breakfast, lunch and dinner too πŸ˜‰ also served hot, room temp or cold..;-) win win win win!!Β Β As always , I highly recommend using only the cleanest food available in your area, free range , grass fed, organic.. I’m SO energised this week~!! from not just eating REALLY well, but also from all the reading, networking, researching, creating recipe modifications, knowledge sharing, the new forum groups I’m a part of, and just the plain ole’ the “keto fascination” that many people are experiencing right now.

A new found “friend” told me, that the Ketogenics way of eating ( I HATE the word “diet” lol) BUT, it is now “trending, being the 6th most popular /researched/ “new”Β eating plan IN THE WORLD right now. I have a feeling that after more people watch “Cereal Killers”, and more people in social media keep sharing recipes, blogs, and these really informational/supportive forums keep popping up everywhere, that the “Ketogenics diet”Β will end up in the top 3. Eventually, when all the sheeple, decide to take a more proactive stance in their personal nutritionalΒ health and choices into their OWN hands we will be less of a minority. I look forward to those days.

I can’t say ENOUGH about an amazing young man, that I “met” online while on my continuing quest/obsession for more and more knowledge on this impressive eating plan ( or WOE = “Way of Eating”). Craig who started the website “Ruled Me” has an impressive story of his own.

The reason I mention he, and his website- I am on a woman’s forum about Ketogenic diet, and over 100 participants all started Craig’s 30 day plan on Monday, and all are there supporting one another, sharing the ups/downs/concerns/achievements to go strong and accomplish this goal until the end of 2014.

THAT is dedication! and also inspiring, and motivating!.. that is ONE HUNDRED WOMEN, from all over the world, who all “met” on a spin off of another forum, after a great gal just put it out there..Β “Hey ladies, I’m startingΒ the 30 day “Ruled Me” eating plan starting on Monday, to take us through the holidays, who’s in?. Β The charge is US$5.00, Craig calls it a “donation”. I GLADLY paid my US$5.00 because the information I received in the 5 .PDFs is on point! Craig breaks it down “Barney style” for those of us who have more of a challenge grasping the full science of things. PLUS, THE RECIPES, and meal plans..all the way down to a shopping list for your essentials.. YAH.. THAT in itself, makes it pretty much a “no brainer” with absolutely zero stress for all, your meals for the next 30 days are simply PLANNED out, and super easy to do..

I HIGHLY recommend, and FULLY support this “30 day WOE plan,..so much, that I WANT TO SHARE THIS WITH EVERYONE.. not that I, personally have a huge following (as of yet), but it is something WORTH sharing.. and the best part?….the guy who wrote the plan?, CRAIG,- WOW.. what a GREAT guy! I can’t believe it is another weekend already! Thanksgiving of 2014, is BEHIND us now.. Where, and how fast the time goes, is just plain CRAZY! This year, ( yet another) where I was not in the States to celebrate Thanksgiving the “traditional” way. I’m currently “downunda” so- to us, it was just another Thursday..;-) I’m now completing my 2nd week of this WOE..my days always start out with the BPC. (YUM!! BULLET PROOF COFFEE!) which keeps me COMPLETELY satiated until I DECIDE, that I need to meet my “macros” for the day to stay in Ketosis. Today’s post is MY recipe for Bullet Proof Coffee, as there is a basic that you follow to get your fat in for the day, which a lot of people can’t FATHOM grass fed butter in their coffee, much less coconut oil, and Heavy Whipping cream?? WHAT what!!?? ..lemme tell you it is AWESOME.. and here goes..( MY version) which is FRIGGIN AWESOME.. don’t hate till you just TRY it..<3

Cori’s unique BPC

* 3 oz fresh brewed Italian coffee ( I like the espresso type! )
* 1 TBS salted grass fed (organic) butter- –people use “kerrygold” stateside, we don’t have that brand here in Oz..
* 1 TBS organic unrefined coconut oil
* 2 TBS organic coconut cream (FULL FAT)
* 1-2 pkts truvia ( to your taste)
* dash(es) Vanilla extract
* dash(es) cinnamon
* dash(es) are you ready?/ TURMERIC..(YUP)
* dash(es) Pink Himalayan rock salt ( YUP, again)

A lot of people use the stick blender to make it all frothy, ..me, I just use a fork and stir really well πŸ˜‰

THIS HAS THE MOST rich, unique taste with the blend of oils, as well as the cinnamon, coconut and turmeric.. these ingredients listed above, are ALL major staples for me ( and most anyone following the Ketogenic WOE) Especially in the past 2 weeks, and- for good reason ! SCIENCE doesn’t lie, and nor does my camera..there is no photoshopping of ANY of these pictures, this is BEAUTIFUL..why? because these are pictures of REAL foods, Colourful foods, WHOLE foods, Nutritional foods, Organic Foods, Range/Grass Foods, BASIC foods, NON Processed, Modified Foods.. SIMPLE..

I have SO MUCH information spinning in my head ALL DAY long ! i have literally become OBSESSED with knowing more , and more… as I continue to delve into the science of this plan.. I am BLOWN away by HOW WRONG we have had it for most of our LIVES ! Especially in our Western cultures.

Fresh Zucchini Herb Fritters

FreshΒ Zucchini Herb Fritters
Can be easily modified for gluten free, and Paleo.
Always try to use organic, and clean/non processed, whole foods πŸ˜‰
Makes 8 fritters

The Stuff you need:
  • 2 large zucchini’s- cut ends off
  • 1 tsp – plus ΒΌ tsp salt
  • ΒΌ cup diced green onions
  • 1/8 cup chopped fresh dill
  • 1/8 cup chopped fresh parsley
  • juice of 1/2 lemon
  • 2 large eggs, lightly beaten with a fork
  • Β½ cup all-purpose flour (optional ifΒ paleo)
  • 1/2 cup panko /or seasoned bread crumbs (optional ifΒ paleo)
  • 1/4 c grated parmesan cheese (optional ifΒ paleo)
  • Β½ tsp baking powder (optional ifΒ paleo)
  • ΒΌ tsp ground black pepper
  • Olive oil forΒ pan
What to do with the Stuff:
  • Grate zucchini on large grating holes or use food processor with the grating blade attachment
  • Place in a large bowl, stir in 1 tsp salt
  • Set aside for 20 minutes
  • After 20 minutes, squeeze dry zucchini over sink, to remove extra water
  • You may also use a cheesecloth for this to expedite process
  • The amount of water you squeeze out will seem like a lot
  • Add another ΒΌ tsp salt, or to taste
  • AddΒ chopped green onion, dill, parsley, lemon juice, beatenΒ eggs, salt, & black pepper, Β mix well
  • In a small bowl combine flour, panko, parmesan, and baking powder
  • Add to the zucchini mixture, mix well
  • In a large heavy bottomed non-stick skillet Β heat 2 tbsp of olive oil over med-high heat
  • Using a tablespoon, add zucchini mixture to skillet, and gently flatten the tops with aΒ fork
  • Cook 3-5 min per side on medium-high heat, adding oil as needed, until golden brown
  • Place on a paper towels to absorb excess oliveΒ oil

May serve with homeade Tzatziki sauce, or sour creamΒ (optional ifΒ paleo)

Double Bean Burritos – Saturday Weekly Recipe post

The Stuff you need;

  • 1 cup cookedΒ brown rice
  • 1 cup chunky Mexican salsa
  • 1 (15-ounce) can black beans, rinsed and drained
  • 6 (10-inch) flour tortillas
  • 1 canΒ refried beans
  • 1 1/2 cup Β shredded Monterey Pepper Jack cheese
  • 2 peeled avocados, cut into slices
  • 12 cilantro sprigs
  • Sliced pickled jalapenos – optional
  • Diced red onions- optional
  • Sour cream- optional

What to do with the Stuff:

  • Cook rice until done
  • Combine salsa and black beans in a small saucepan
  • Cook over medium heat 5 minutes or until thoroughly heated
  • Heat refried beans
  • Warm Tortillas
  • Spread 1-2 tablespoons refried beansΒ over each tortilla
  • Top each tortilla with someΒ rice
  • Add 1/3 cup black bean mixture
  • 4 tablespoons cheese
  • 2 avocado slices
  • 2 cilantro sprigs
  • Roll up burritos
  • Serve with side salsa, sour cream, sliced jalapenos, and diced red onions if desired

 

Easy Mashed Potato Puffs – Saturday Weekly Recipe Post

Easy Mashed Potato Puffs

Quick, Easy, and delicious!

The Stuff you need;

  • 3 cups of mashed potatoes
  • 2 eggs, separated
  • 1/3 cup sour cream
  • 1 heaping cup shredded sharp cheddar cheese
  • 4 TBSΒ grated Parmesan
  • 2 TBSΒ chopped scallions
  • 2 TBS chopped parsley
  • Salt and black pepper, to taste

What to do with the Stuff:

  • Preheat oven to 375 degrees F
  • Lightly grease nonstick muffin pan ( or Ramekins)
  • In a medium mixing bowl, whisk the egg yolks, then add in the sour cream
  • Stir in both cheeses and theΒ scallions, parsley salt & pepper
  • Add mashed potatoes, and mix well
  • Fold in pre- stiffened egg whites, mix well
  • Spoon into the muffin pans (or ramekins) filling the cups to slightly below the top
  • Bake 30- 35 minutes until they pull away from the sides of the cup and are golden brown
  • Remove from oven and let them cool 5 minutes in pan

Serve with toppings of choice

Black Pudding, Spinach & Mushroom Fritatta

” !!!??? Black Pudding???, (??WTF??) Β I thought it was Salami Β ” Β cori

THIS, was a first for me. The husband brought home this lovely looking package of meat, which I initially thought was salami.. upon further review, I read that it was “black pudding” (!?wtf!?) ..Sooo..STRAIGHT to Google I went,. Initially, I was grossed out…I realized what it was,Β eeek…umm yah, Β a mixture with pigs, (or ox blood), (!!!???!!!) whaaaaat??!! Β ugh-I have to admit, at first I shuddered, but then realizing, that I would be THEΒ WORST hypocrite of all time, had I not at least TRIED it, ( re: “trying’ meansΒ preparing, AND eating ).. So, I DID, Β πŸ˜‰ and quite frankly, I am GLAD I did πŸ˜‰ it was actually REALLY good, I will actually visit this delicacy again in the future….. However, for the faint of heart, I won’t EVER judge you, ( and please don’t judge me..lol) SO, that being said,Β Β feel free to modify if need be, the fritatta is pretty easy going. You may substitute any ground sausage, or beef, or simply leave it vegetarian πŸ˜‰ Β Bon Appetit!

The Stuff you need :

  • 3-4 TBSΒ extra virgin olive oil
  • 2 portions black pudding
  • 2 small (red or gold) shallots diced finely
  • 6 nice sized mushrooms sliced, and halved
  • Hearty handful of fresh baby spinach
  • Salt and pepper to taste
  • 6 eggs
  • Handful of shredded mozzerella
  • Small bunch fresh parsley, chopped

What to do with the Stuff:

  • Melt the butter in a frying pan
  • Remove the skin from the black pudding and crumble into the hot butter
  • Add Shallots, and saute’ until well blended, and pudding browns
  • Add mushrooms, and saute’ in with mixture until just soft
  • Add Spinach, continue cooking until it starts to wilt
  • Break the eggs into a small bowl and whisk with a splash of milk
  • Roughly chop the parsley & stir into the eggs and pour into pan
  • Lift sides and start to cook bottom, lifting, and letting the bottom cook well
  • Cook over low heat till the bottom has formed a golden bottom
  • under broiler
  • The center will probably still be very moist
  • Heat an overhead grill
  • Lift the pan from the heat and slip it under the grill
  • Top pan with shredded mozzerella, watch closely until eggs have set, cheese has melted, and the top is lightly browned
  • Cut into wedges and serve.

Stellar Hearty Breakfast Skillets

The Stuff you need: (4 Skillets)

  • 2 pounds potatoes, cooked & cubed
  • 1/2 pound bacon cooked, and cut into pieces
  • 1 green bell pepper, sliced
  • 1 red Β bell pepper, sliced
  • 1 onion, thinly sliced/halves
  • 2 cups sliced mushrooms
  • salt, pepper, garlic powder, ground parmesan cheese, & chili powder to taste
  • 4 cups shredded Pepper Jack (or monterey jack)Β cheese
  • 8 eggs

What to do with the Stuff

  • CookΒ potatoes (can use bacon pan/grease) on medium heat until well browned
  • Flip potatoes occasionally to prevent sticking
  • Stir in green pepper, red pepper, onion, and mushrooms
  • Cook until vegetables are tender
  • AddΒ cooked bacon, season with salt and pepper, garlic & chili powder and parmesan cheese
  • Cover with shredded cheese and turn mixture until cheese is melted
  • Keep on low heat while cooking eggs to each persons liking
  • Place portions of potato mixture in individual serving dishes, and top each with 2 eggs
